Pumpkin Pancakes Recipe

 Pumpkin Pancakes
 
What You Will Need:
1 + 2/3 c Vegan Pancake Mix or Flour
1 c + 1 tbsp Plant Mylk
1 tsp ACV (Apple Cider Vinegar)
½ tsp Vanilla
¼ c + 3 tbsp Pumpkin Puree
¼ tsp + 1/8 tsp Cinnamon
1/8 tsp Ginger
1/8 tsp Baking Powder
¼ tsp + 1/8 tsp Pumpkin Pie Spice
Dash of Cardamom
¼ to ½ c Granola per Pancake Serving (topping)
Maple Syrup

 

Makes Approximately 8 Medium Sized Pancakes

  1. Combine Plant Mylk, ACV and Vanilla in small cup and set aside (this will make your butter mylk).
  2. Sift together Flour, Cinnamon, Ginger, Baking Powder, Pumpkin Pie Spice and Cardamom in a bowl. Mix until all dry ingredients are well combined.
  3. Add your “buttermylk” and Pumpkin Puree to your dry ingredients and mix until there are little to no lumps remaining. Taste your batter at this point to see if you need to adjust your spices. *if your batter is too dry, add a tbsp at a time of Plant Mylk until desired consistency is achieved.
  4. Heat a griddle, cast iron, or non stick pan to medium heat. Apply oil to surface if need be.
  5. Apply batter to cooking surface in 4-4.5 inch diameter circles.
  6. Once the pancakes begin to bubble on most of the top surface (approx 2 mins), flip the pancake to complete cooking on the opposite side (approx 1 min). Check your pancakes as everyone’s cooking surface and heating source will cook at a different rate.
  7. If you are cooking multiple batches of pancakes, you can cover the pancakes with a damp clean kitchen towel and place in oven on warm until all your pancakes are complete. *Be sure to not over heat, let the towel dry out and/or let the towel touch the heating source to avoid fire or other accidents. 
  8. Once you are ready to serve, top each batch of pancakes with Granola and Maple.

Notes: I used Purely Elizabeth Vanilla Almond Butter Grain Free Granola, Annie's Organic Classic Pancake Mix and Crown Maple Syrup Brand – Bourbon Barrel Aged Maple.
