Easy Vegan Coffee Cake
Maple Swirl Filling 3/4c brown sugar 2 tbsp maple 1 tbsp cinnamon 1 tsp vanilla Crumb Topping 6 tbsp melted butter 1c sugar 1c apf 1 tbsp cinnamon Cake Batter 1 1/4c mylk 1x oil 2/3c applesauce 2 tsp vanilla 3c apf (I used 1/2 apf, 1/2 cake flour) 1c sugar 3 tsp baking powder 1 tsp salt Glaze 1c powdered sugar 1 tsp vanilla 1/2 tbsp mylk (add splashes of mylk or powdered sugar to get desired consistency) 1. Mix maple swirl ingredients and set aside 2. Mix crumble ingredients together and set aside 3. Set oven to 350 degrees. Make batter - mix wet ingredients, separately mix dry ingredients. Make well in center of dry ingredients and add wet ingredients to well and mix by hand or mixer. 4. Into prepared pan (lined with parchment, oiled or both) pour 1/2 cake batter into pan. Sprinkle in maple swirl all over the batter. Carefully add remaining batter on top, then add crumble. 5. Put cake into oven and bake 40-50 mins checking for doneness around 38-40 mins. 6. Once cake is out to cool, Make glaze - mixing all ingredients and adding more mylk and/or powdered sugar to get desired consistency and/or quantity. 7.
